Cranberry Rum Punch

Ingredients

6 Servings

2

cups fresh cranberries

½

cup sugar

1

cup white rum

½

cup fresh lime juice

Mint sprigs (for serving)

Preparation

  1. Step 1

    Bring cranberries, sugar, and 2 cups water to a boil in a small saucepan, stirring to dissolve sugar. Strain syrup into a pitcher; cover and chill. Set cranberries aside.

    Step 2

    Add rum and lime juice to syrup; chill until cold, about 1 hour. Serve punch over crushed ice garnished with reserved cranberries and mint sprigs.

  • I loved this (I doubled it so I could make a number of drinks at a party) and it got great reviews. I followed the recipe (okay, maybe a splash more rum), but it came out QUITE tart/sour. So, I slowly added in superfine sugar to the finished pitcher of punch until it was at a sweetness that I thought people would like - I probably added in another 1/3 cup of sugar, and I really think it needed it. Not too sweet, but not overwhelmingly tart either. I also cooked the cranberries longer than the recipe seemed to require, but I wanted more cranberry flavor. In retrospect, maybe that made it so tart? But the cranberry flavor was great. I recommend reserving some fresh cranberries to plop in as garnish if you cook the cranberries for a while to make a flavorful syrup, since they get very soft and squishy and not garnish-like at all.

  • I make this for myself all the time, it is probably my favorite drink to make myself. The only thing I tweak is adding a bit more lime juice than the recipie calls for but it is really good either way.
